Beige is a unique color because while you are on it other nations cannot declare new wars on you. If you are a new nation, you can stay on Beige for up to 2 days before you are automatically changed to Gray. If you lost a war, you have 1 day of Beige protection before you get turned to Gray. You can change from Beige at any time, but doing so makes your nation vulnerable to new attacks, so keep that in mind! This is the description from the speed round and is no longer accurate.
